So it's National Fried Chicken Day! We decided to share a "healthier" fried chicken recipe. The chicken is pan fried with almond meal instead of flour! Crispy Almond Meal Chicken

A healthier option to pan fried crispy chicken using almond meal instead of flour!
- 1 cup almond meal
- 3 Tablespoons fresh parsley (chopped)
- salt + pepper to taste
- 1/2 teaspoon garlic powder
- 3 Tablespoons olive oil
- 2 Tablespoons lemon juice
- 4 egg whites
Mix almond meal, 2 Tablespoons of parsley, salt + pepper, and garlic powder. Pound out chicken until flattened. Heat a saucepan with olive oil and lemon juice on medium high heat. Dip each side of chicken in egg whites. Then coat chicken with dry ingredient mix. Pan fry chicken until browned on the outside and cooked through. To serve, top with remaining Tablespoon of parsley and salt + pepper to taste.
