Fun with a Spiralizer: 3 Superfood Recipes to Jump Start Your New Year

In case you have already fallen off the resolution train, I've got three superfood recipes for you today to get you right back on track. The fun part? These are all spiralized superfood recipes. Raise your hand if you love your spiralizer. I am obsessed with my new KitchenAid spiralizer mixer attachment. I am finding an excuse to spiralize anything + everything. The good thing about spiralizing? It gets you to eat healtier. You can't really spiralize chocolate or cookies or ice cream. Well maybe you can? If you can, I'm sure I will find a way. But for now I have found veggies to be the best food to spiralize. Truth be told, I didn't set any resolutions this year. I really don't ever set resolutions, not because I have some profound meaningful reason ... I just can't ever get it together enough to set some. However, if I were to set some resolutions they would most certainly involve superfoods. I like the idea of including more healthy foods into my diet rather than focusing on eliminating my most favorite indulgences. On that note, first up is this Citrus Apple and Radish Salad with Shaved Manchego and Fennel. Who knew a radish was a superfood?! This salad is everything: the peppery radishes, the sweet apples, and the manchego ... oh manchego ... don't get me started on manchego. I have such a love for Mr. Manchego. The smooth and smokey sesame oil is balanced out by the punch of the pickled carrots. Carrots are at the top of my list when it comes to veggies ... Mikes too ... he loves him some buttered carrots. Mikes makes so much fun of me everytime I eat beets because I talk about how you can just "feel the vitamins." We also sing "I Got My Beets Down Low... Down Low ... Down Low" everytime we eat beets, but that's besides the point. It gets real weird around here people. In my defense on the beets thing though, beets ARE a superfood and are packed with lots of good-for-you things. And they are just plain delicious. This beet recipe is no exception.
